Knitting on circulars is surprisingly easy, the best way to do it is to just jump right in and see how you go ;)
However, for a hat I would suggest using 2 circular needles so you don't have to muck around with double pointed needles or magic loop when the hat gets too small to fit on one circular.
Have you looked at knittinghelp.com? There's some great videos on there, including ones on different methods of knitting in the round :)
